A HERITAGE SERVING INNOVATION

Rooted in a long-standing cooperage tradition, Tonnellerie Saury builds on expertise that has been passed down and refined over generations. This heritage, deeply grounded in the culture of oak and the mastery of cooperage toasting techniques, now forms the foundation of an approach firmly focused on innovation.

With the Saveurs range, this dual commitment comes to life. The experience gained through close collaboration with winemakers, wine ageing practices, and the evolving expectations of the industry continuously fuels our research and innovation efforts. Much like a chef crafting signature recipes, each toast profile, oak origin, and blend is designed as an aromatic composition—a delicate balance of intensity, elegance, and complexity.

Research and Innovation do not break with tradition; they build upon it. They enable us to explore new aromatic expressions, refine the precision of wine ageing, and provide winemakers with a true sensory language inspired by gastronomy. Oak thus becomes an ingredient in its own right—carefully selected, blended, and revealed to enhance and respect the unique identity of every wine.

Commitment

OAK ORIGIN AND TRACEABILITY

At the heart of the Saveurs range, oak selection is guided by one essential commitment: ensuring origin, quality, and traceability.

Our sourcing is fully integrated, allowing complete control over the raw material, from log selection through to the manufacturing of finished products.

Saveurs products may incorporate different oak species — Quercus petraea, Quercus robur, and Quercus alba — sourced from forests located in France, Europe, and the United States.
This diversity of origins enables us to offer a broad range of grain structures and aromatic profiles.

Each batch is identified, monitored, and controlled throughout every stage of the process, ensuring complete traceability. This approach combines technical mastery with aromatic richness, creating precise and balanced wines.
