The extraction of desired aroma and tannin molecules takes place during toasting in a convection oven. Each level of toast is programmed according to the chosen profile. Saveurs proposes three precise formulas, or blends, based on a combination of toasts, which enables to orientate the wine towards one of the 3 following flavour profiles:
